​Is there anything cozier than a warm, frosting smothered cinnamon roll with a cup of hot coffee next to the Christmas tree on Christmas morning? Mmmmmmmm

Too bad that most other cinnamon roll recipes are LOADED with sugar and refined carbs. These ingredients lead to weight gain, energy crashes and bad moods. Ew

For the Cinnamon Rolls

For the Cinnamon Fillings

  • 1 Tablespoon ground cinnamon
  • ¼ cup coconut sugar
  • 1 Tablespoon coconut oil, melted

For the Cream Cheese Frosting

Instructions

  1. Preheat the oven to 350 degrees F. Grease a casserole pan with coconut oil or butter.
  2. In a mixing bowl whisk the protein powder, coconut flour, baking powder and sea salt.
  3. Mix in the melted coconut oil and eggs. Dough will be sticky. Use coconut flour on your hands and on the dough to reduce the stickiness as you form the cinnamon rolls in the next step. 
  4. Place parchment paper down on the counter or cutting board and cover with coconut flour. Transfer the dough to the parchment paper and sprinkle more coconut flour over the top. The entire surface of the dough should be dusted with coconut flour in order to prevent sticking. Cover the dough with another piece of parchment paper and use a rolling pin to flatten into a large rectangle.
  5. In a small bowl combine the filling ingredients. Spread over the flattened dough. Roll the dough up into a log. Cut into 12 pieces and place in the casserole pan.
  6. Bake for 15 minutes in the preheated oven until the edges are lightly golden.
  7. Beat the frosting ingredients together until creamy. Spread over warm cinnamon rolls and enjoy with a hot cup of coffee. Store leftovers in the freezer and microwave for 20 seconds to re-warm. Enjoy!
