  1. Place a medium-sized pot over low heat. Add the white chocolate chips and peanut butter and stir until fully melted and smooth. Remove from heat.
  2. Stir in the oats, shredded coconut, and salt. Once the mixture is warm but not hot, stir in the protein powder until fully combined. 
  3. Shape the dough into 20 cookies and place on a parchment paper-lined pan. If desired, sprinkle with additional shredded coconut and drizzle with melted stevia-sweetened chocolate. Place in the fridge to cool and firm. Enjoy!
